Instructions For Seviche
Here are the steps for preparing the Mexican Seviche, just as it's done in Mexico.

Assemble all the ingredients you'll need, including 1 pound of fish, 3 limes, 1 avocado, 2 tomatoes, onion, cilantro, and salt. Begin by washing the fish. Then, to cube it, you first cut it into strips about 1/2 inch wide like this, then cut the strips into small cubes like this.
Next make the lime juice, by cutting the limes and straining through a small strainer like this one. When you're done straining, add the lime juice to the bowl of chopped fish.
Add salt to taste, them mix, cover and set aside in the refrigerator for 2 hours.

Meanwhile, chop the onion, tomatoes, avocado, and cilantro as shown here. Mix these into a bowl.
After the fish and lime has been refrigerated for 2 hours, mix the fish with the tomatoes, avocado, onion, and cilantro like this.
Let this sit for 20 minutes and serve on 5 inch crunch tostadas.
Enjoy!
