This is a recipe for making "Hevos Con Chorizo". It's a delicious eggs and Mexican sausage meal you can enjoy for a special breakfast, or any time of day if you like.

To make it, the only things you'll need are a half pound of chorizo, and 6 eggs. The preparation time for this recipe will be about 30 minutes.

Here's how you prepare it: First remove the skin from the chorizo. Then break it apart and put it into a 10 or 12 inch frying pan. The meat has enough of it's own grease/oil of it's own so you don't need to use anything else in the pan.

Cook the chorizo on medium heat, and gently break it up with a fork. The cooking time for the sausage will be about 15 minutes.

While the chorizo is cooking, you can prepare 6 eggs scrambled-style.

Beat the eggs well and make them as you would for scrambled eggs, adding a little milk if you prefer.
